The present invention relates to a manufacturing method of a functional pork cutlet and, more specifically, to a manufacturing method of a functional pork cutlet comprising: a cutting and forming step (S1) of cutting a sirloin of the back part of pork and forming shape; a slicing step (S2) of manufacturing a sirloin slice at 0.3-0.5 mm of thickness; an aging step (S3) of aging the sirloin slice in a Codonopsis lanceolata extract or a balloon flower root extract; a laminating step (S4) of loading 20-30 sheets of sirloin slices; a dipping step (S5) of covering a wheat flour batter; a coating step (S6) of coating fresh bread crumbs; and a fridge storage step (S7). According to the manufacturing method of pork cutlet of the present invention enables a consumer to eat nutrients of Codonopsis lanceolata or balloon flower roots in addition to the nutrients of pork meat, stimulates the appetite due to the characteristic flavor, and has unique characteristics in texture and remarkable differentiation by making the thickness of sirloin slices thin. |
