摘要 The invention consists of a process for substantially separating the components of a mixture of 51 nucleotides by passing an aqueous solution at pH below 2, of the 51-nucleotide mixture through a column of a sulphonic acid cation exchange resin in the free acid form and separately eluting each 51 nucleotide fraction from the column with either water, or with water, then with a dilute aqueous solution of a strong inorganic acid or alkali metal salt thereof and then with aqueous ammonia solution. The starting material may be obtained by enzymatic degradation of nucleic acid in which the enzyme is capable of converting 51-ade-nylic acid to 51-inosinic acid, which enzyme systems may be obtained from organismo of the Actinomyces type. The preferred cation exchangers are sulphonated polystyrene bead resins. Optimum resin usage is achieved by removing cations other than nucleotides prior to the separation, e.g. by ion-exchange oleionization, precipitation, or electrodialysis. Examples describe recycling the initial fractions containing concentrates of the constituents to obtain the pure 51-nucleotides or mixtures of 51-inosinic and 51 guanylic acids which improve the taste of foods (see Division A2).ALSO:Foods are flavoured with 51 nucliotides separated from mixtures thereof (see Division C2). Superior in flavouring are 51-inosinic and 51 guanylic acids which in admixture display a synergistic effect.
