摘要 The present invention relates to a production method of a tangerine peel dough, and tangerine peel cookies and tangerine peel bread produced by the tangerine peel dough. The production method of tangerine peel dough which uses tangerine skins comprises the following steps: collecting the skin from the washed tangerine; drying the collected tangerine peel until the weight of the tangerine peel is 25-35% when compared to the tangerine before a drying process at 20-40°C; pulverizing the dried tangerine peel into 100-300 meshes to obtain tangerine peel powder; and mixing 10-50 parts by weight of tangerine peel powder, 1,000 parts by weight of grain powder formed of flour or barley powder, 150-300 parts by weight of sugar, 100-150 parts by weight of stirred eggs, 300-350 parts by weight of melted butter, and 50-70 parts by weight of oligosaccharide. By separating the skin from the tangerine containing tangerine oil, drying, pulverizing, and adding to the grain powder; a user can produce new bread or cookies containing the unique flavor of the tangerine oil, handle consumer's preference, reduce the manufacturing costs, and obtain products with a competitive price.
