The method involves baking the surface of the cakes by heat conduction with the epitome provided, where the sponge mixtures are introduced into baking pans before the baking process. The baking pans have the desired epitome shape on the application surface for the heat transfer medium. The emptying of the baking pans takes place by their overturning around 180 degree. An independent claim is also included for a device for producing cakes with epitome of sponge mixtures.
