PROBLEM TO BE SOLVED: To provide a material containing 3,5,4'-trihydroxy-trans-stilbene that activates the sirtuin gene known as a longevity gene.SOLUTION: When the condition of 3,5,4'-trihydroxy-trans-stilbene present in colored fruits of grape and berries is studied in detail, 3,5,4'-trihydroxy-trans-stilbene is present in the mesocarp of the fruit skin comprised of epicarp, mesocarp and endocarp, in a state stably binding to pectin. When the pectin-bound 3,5,4'-trihydroxy-trans-stilbene is left in water, it would not dissolve. Pectin, however, dissolves at the HCl concentration of gastric juice to free 3,5,4'-trihydroxy-trans-stilbene. On the basis of this finding, the colored fruit skin of grape or raspberry is finely cut to small pieces of the average length of 3 mm or less to give pieces corresponding to a compound of pectin and 3,5,4'-trihydroxy-trans-stilbene. Thus obtained is a material containing 3,5,4'-trihydroxy-trans-stilbene, which easily degrades in the stomach and is easy for ingestion. |
