PROBLEM TO BE SOLVED: To provide a production method of bread using wheat bran, which allows wheat bran-containing bread having excellent flavor and texture without bran odor and harshness to be easily produced.SOLUTION: A production method of bread includes mixing wheat bran, wheat flour and/or wheat gluten, and hot water. Preferably wheat bran is contacted with hot water, and then wheat flour and/or wheat gluten are added to be mixed. The hot water has a temperature of preferably 85 to 100°C, with a used amount of preferably 80 to 120 mass parts relative to 100 mass parts of the wheat bran. The use ratios of the wheat flour and/or the wheat gluten to the wheat bran are preferably 100 to 200 mass parts of the wheat flour and/or 15 to 45 mass parts of the wheat gluten to 100 mass parts of the wheat bran. |
