A comestible puff, which may be consumed either in the dry state or reconstituted with water, comprises a mixture of a ground carbohydrate and a ground fruit or vegetable, which is puff dried to a low moisture content, preferably below 5%. The fruit or vegetable may be in the fresh or dried form, or in the form of a concentrate such as a juice. In one method the fruit or vegetable is partially dried, ground, mixed with the carbohydrate, the moisture content adjusted to 5-25 wt. per cent., forming into a web, puff-drying under vacuum at about the pseudo-melting point, cooling under vacuum, releasing the vacuum, and breaking the web into particles. |
