Starch is continuously enzymatically hydrolysed by introducing continuously a suspension of starch in a liquid into a reaction cycle at a point where it is mixed with an already hydrolysed liquid stream of starch, the mixed stream being heated to a temperature below that at which the enzyme used will be inactivated (e.g. about 85‹ C.) and passed to a reactor, and is characterized by the enzyme being introduced continuously at a point between said mixing and the reactor, or to the reactor itself, and the product being partially recirculated and partially withdrawn as it is produced. Alpha-amylase is mentioned as enzyme. The mixing chamber, and a steam blower for heating may be of the type described in Specification 982,554. A diagrammatic flow chart is given (not shown).
