PROBLEM TO BE SOLVED: To provide a carbonated protein and juice beverage having long-period storage stability and richly containing protein.SOLUTION: A method for producing a protein beverage comprises: a process of mixing protein selected from casein, lactalbumin, serum albumin, glycomacropeptide, soybean protein, rice protein, pea protein, canola protein, wheat protein, hemp protein, zein, flax protein, albumen protein, ovalbumin, gelatin protein and a combination thereof, with water to have a content of 2-15 wt.%; a process of obtaining a protein beverage by further mixing a pH adjusting agent with the mixture and adding carbon dioxide thereto to carbonate 0.1-6 pts. mass of the mixture per 1 pt. mass of liquid in the beverage; and a process of packaging the protein beverage in a container capable of storing the beverage without cold storage. By the method, the protein beverage is produced so as to be essentially free from any harmful active sanitary products without heat treatment to the protein beverage. |
