Product based on rye flour is prepd. by baking a formed dough in which is incorporated a material which makes the normal prolonged prooving period superfluous; essentially the material contains a wholly or partially pre-stiffened starch product, pref. pre-stiffened in presence of a sweetener such as glucose syrup, honey, etc. The material is pref. applied in the form of a thin sheet to internally heated rolls and dried to 6% moisture content. |
