The present invention relates to a method for extracting cypress oil and more specifically, to a method for extracting cypress oil, capable of extracting cypress oil containing 60% or more of phytoncide. The method includes a) putting cypress tree raw materials, including cypress leaves, into a pressure tank; b) supplying high pressure steam and high pressure air to the pressure tank; c) converting vapor from the pressure tank into condensed water by cooling the vapor; and d) separating the cypress oil and cypress water from the condensed water.
