PROBLEM TO BE SOLVED: To provide a method for manufacturing a transparent oil-in-water type emulsion by a combination of materials which are acceptable as food without using a surfactant or emulsifying agent.SOLUTION: The method for manufacturing the oil-in-water type emulsion includes: obtaining a fatty acid by allowing a lipase which hydrolyzes two of the residues of three fatty acid to act on triglycerol fatty acid ester; mixing water, the fatty acid, alcohol and a basic amino acid so that a mass composition ratio of the fatty acid to water is 1 or less and the mass composition ratio of the fatty acid to alcohol is less than 1; adjusting a pH of the base to the range of 6 to 8; and thereby, obtaining the oil-in-water type emulsion. |
