The installation comprises a freezing tank (20) containing freezing fluid, a plate (31) comprising a set of holes (32) for receiving shoulders of bottles and a unit (60) filling the cup with a cooling fluid, where the plate is positioned in the tank so that the bottle necks in the dunk icing medium. The tank and the vertical walls of the tank form a bowl assembly. The unit fills the cup with the cooling fluid several times at predefined intervals or each time when a height of fluid in the cup is lowered below of a minimum height. The control unit comprises an overflow pipe that is adjustable in height and is positioned in a wall of the container to discharge the excess fluid freezing in the tank into a container (40). The control unit closes the container in leaktight manner when it is in the rest position. The freezing fluid and the cooling fluid comprise brine or glycol-based solution. The tank comprises a set of freezing intermediate walls arranged to form a set of tubs. Each plate is positioned in each tub to form a set of basins. The tank comprises a cover to partially cover the tank. The cover is mounted movably between a first position where the cover covers a first portion of the tank and a second position where the cover covers a second portion of the tank. The cover collects the fluid running off from the tank. An independent claim is included for a method for freezing collars of bottles.
