WATER-SOLUBLE SOYBEAN POLYSACCHARIDE SUCCINIC ACID DERIVATIVE ESTER, AND PRODUCING METHOD THEREOF

PROBLEM TO BE SOLVED: To provide a dispersion stabilizer preventing aggregation and precipitation of a protein under acidic condition, especially in pH range around pH 5 which is more close to neutral than an isoelectric point of the protein.SOLUTION: Protein particles can be dispersed and stable around pH 5 and acidic protein food can be produced by using a water-soluble soybean polysaccharide esterified by succinic acid or succinic acid derivative in which a hydrocarbon chain is bound to a carbon atom at 2-position in the succinic acid. The hydrocarbon chain of the succinic acid derivative has preferably 2 to 18 carbon atoms and an octenyl group is most preferable. The esterified polysaccharide has also high emulsification ability.
