<P>PROBLEM TO BE SOLVED: To provide a yeast which can hold a sulfur-containing compound such as glutathione in the cell body in a large amount, and to provide a sulfur-containing compound-containing food or drink using the yeast. <P>SOLUTION: Provided are a method for producing a yeast mutant strain, in which at least one part of DOA1 gene is deleted or mutated to enhance the content of a sulfur-containing compound in the cell bodies of the yeast mutant strain; the method for producing the yeast mutant strain, in which the sulfur-containing compound is glutathione; the method for producing the yeast mutant strain, in which at least one part of the DOA1 gene is deleted or mutated by a mutation treatment; the yeast mutant strain produced by the production methods; the culture product of the yeast mutant strain; a yeast extract containing the culture product; a sulfur-containing compound-containing fraction obtained by fractionating the culture product; a sulfur-containing compound-containing food or drink containing the culture product or the fraction; and the sulfur-containing compound-containing food or drink, in which the sulfur-containing compound is glutathione. <P>COPYRIGHT: (C)2010,JPO&INPIT |
