The present invention relates to a manufacturing apparatus for germinated brown rice containing chitosan, and a method thereof. The manufacturing method of germinated brown rice of the present invention comprises a brown rice preparation step of washing brown rice, which is polished to take off husks only, with washing water 3-4 times, and manufacturing a diluted chitosan solution by mixing purified water and a chitosan solution; a germination preparation step of inputting washed brown rice into an initial germination chamber (111) after completion of the brown rice preparation step, supplying the diluted chitosan solution at 18-20°C and circulating, and soaking the brown rice and growing up to the stage right before the germination by stirring the brown rice while evenly spraying the diluted chitosan solution and supplying bubbles to brown rice in stirring from the bottom so as to smoothly supply oxygen; a brown rice germination step of washing and inputting the brown rice in the stage right before germination into a germination drying chamber (131) which maintains the temperature of 23-26°C after completion of the germination preparation step, and germinating for 24 hours while frequently spraying the diluted chitosan solution; and a germinated brown rice drying step of drying the germinated brown rice by supplying warm air at 27-30°C after completion of the brown rice germination step. According to the present invention, brown rice is germinated so as to efficiently absorb chitosan, and germinated brown rice with a high quality is able to be obtained. |
