摘要 PROBLEM TO BE SOLVED: To provide a method for producing bread which enables working efficiency in producing bread to be improved by hastening fermentation, and to provide a method for producing bread which enables high quality bread to be obtained even when there is the need of using wheat flour produced by the milling of unripened new wheat in which time has not yet passed enough after harvested, enables good quality bread to be obtained even when quality is liable to become unstable in the rainy season and enables bread quality to be stabilized all the year around and also to provide bread produced by the same method. SOLUTION: In a bread producing method comprising at least a bread dough charging process, a fermentation process, a degasification process and a baking process, the objective method is constituted by using ocean deep water instead of salinity and water usually used in the bread dough charging process. In the production of steamed bread, desalted ocean deep water is used in the bread dough charging process.
