The present invention relates to a manufacturing method for a roasted semi-dried fish seasoned with red pepper paste sauce comprising (a) a step of sticking a semi-dried fish dried in order to contain the moisture of 40-70% with a bamboo skewer in which length is 20-30 nm and diameter is 2-6 mm; (b) a step of preparing red pepper paste sauce comprising glutinous rice red pepper paste and nut products; (c) a step of applying the sauce of the step (b) to the semi-dried fish of the step(a); and (d) a step of heating the semi-dried fish of the step (c), and a roasted semi-dried fish manufactured thereby. The red pepper paste sauce of the present invention makes savory taste and palatable taste while being nutty and having chewiness with the nut products and is able to stay the native flavor and smooth texture of the semi-dried fish. The present invention provides high-protein low-calorie foods satisfying consumer preferences by applying the red pepper paste sauce to the semi-dried fish and increasing the stability on storage. |
