A method for making a special meat product includes preparing raw material. Trimmed meat of wild animals is the raw material. Forming of the product is carried out of the trimmed meat by hand, on a loin muscle three longitudinal cuts are made, putting beef strips wrapped by lard into the formed openings. Marinating is carried out at a ratio of meat : marinade of 1:1 - 1:1.1 in the course of 24-27 hours using a marinade, the composition of which comprises 18-25 % of thermally treated kiwi juice or puree. The ready products are cooled. |
