PROBLEM TO BE SOLVED: To produce a liquid fragrance containing a lot of fragrance component or the like by effectively using generated steam having been discharged with doing nothing in a factory or the like in which a material liquid is concentrated to produce processed food.SOLUTION: A method for producing a liquid fragrance includes: a concentration step of introducing heated steam SO into a heating jacket 13 not contacting with a material liquid A supplied into a material tank 3 and concentrating the material liquid A for a prescribed time at a treatment temperature of not more than 100°C under decompression atmosphere; a cooling step of cooling and liquefying generated steam S1 containing a fragrance component generated in the concentration step; and a recovery step of recovering a liquid containing the fragrance component generated in the cooling step and using the liquid as the liquid fragrance B. |
