A gelatine product for making desserts is obtained by mixing granulated gelatine, granulated sugar, powdered fruit acid, and if desired flavouring and colouring substances, adding to the mixture liquid in a sufficient quantity only to cause the mass to cohere when compressed, and compressing into tablets. The liquid added may be water, an organic solvent, sugar solution or syrup, or a dilute aqueous solution of gelatine, or sufficient liquid may be contained in the added flavouring material. Invert sugar may also be added. The fruit acids used include citric, tartaric or malic acid or mixtures thereof. The tablets may be sufficient to make a portion for one person by dissolving in water. The tablets may be enclosed in a moisture-resistant wrapping. Specification 8566/96, [Class 49, Food &c.], is referred to. |
