PROBLEM TO BE SOLVED: To provide a cell culture method for introducing polarity to hepatocytes and forming huge biliary canaliculi.SOLUTION: A hepatocyte culture method for forming biliary canaliculi in hepatocytes includes arranging hepatocytes embedded in an extracellular matrix on a substrate and culturing the hepatocytes. The extracellular matrix forms a columnar hollow on the substrate and the hepatocytes are arranged in the columnar hollow and cultured.
