摘要 A method for obtaining paste-like melted cheese includes mixing cheese with a melting salt, a fat component and melting the mixture. Nonfat lactic cheese is used as the cheese adding flavouring additives and nonfat dry milk. Heat-resistant palm-kernel oil is used as the fat component, sodium citrate is used as the melting salt, and a furcelaran solution is added to give the predetermined texture.
