PROBLEM TO BE SOLVED: To provide a noodle composition having rich flavor of a peanut, not sticking and integrating with noodles cut in a given narrow width immediately after being cut, and being firm and chewy after being boiled, and to provide a production method thereof.SOLUTION: A noodle composition contains 15-25 pts.wt. of peanut flour and 8-12 pts.wt. of starch based on 200 pts.wt. of grain flour. A production method of the noodle composition includes, after charging the grain flower and the peanut flour in water of a prescribed amount and stirring the mixture uniformly, adding water of a prescribed amount and stirring the mixture until becoming uniform, next forming it like a pat of dumpling, charging the starch and kneading the mixture a plurality of times, then sealing and curing the mixture, and further kneading the mixture a plurality of times if necessary. |
