PURPOSE: A pre-treating method of mixed cereals is provided to improve smell, taste, texture, external appearance, overall preference, etc. of the mixed cereals. CONSTITUTION: A pre-treating method for taste improvement of mixed cereals comprises the following steps: heating grains, mixed grains, or beans which are raw materials of the mixed cereals at 100-140 degrees centigrade until the moisture content of the raw materials is reduced to 1-5%; and vaporizing the moisture in the raw materials instantaneously using infrared heating and micronizing which is one of the dry heat treatments. |
