PROBLEM TO BE SOLVED: To provide a method for suppressing formation of an aggregate produced when protein and acid polysaccharide are used in combination under an acid condition of a pH 2.5-6, and furthermore, to provide an acid gel-like food and drink containing protein having uniform tissue and texture, while containing protein and acid polysaccharide.SOLUTION: One or more kinds of carrageenan, selected from the group consisting of ι carrageenan, λ carrageenan, &kgr;2 carrageenan, and carrageenan containing μ ingredient and &ngr; ingredient, is used as a stabilizing agent. |
