A method of extracting an active ingredient from a plant or a mushroom characterized by involving the step of extracting the active ingredient which comprises stirring a mixture consisting of 1 part by weight of the above-described material and 2 to 7 parts by weight of water in a container that is closed from the viewpoint of pressure at a temperature of 100 to 250oC under such conditions as applying a high shear force, thus grinding the material to give an average maximum size of 1 to 20 µm, obtaining a ground mixture consisting of an aqueous phase containing the active ingredient and a solid residue having been thus ground, and then recovering the aqueous phase. |
