The invention relates to a method for obtaining a granulated food product, a granulating mixture is prepared, for which purpose a solution of sodium alginate and thermotropic polysaccharide is prepared on a liquid base of a food product, into which a slightly soluble calcium salt is added at a ratio of the sodium alginate, thermotropic polysaccharide and a slightly soluble calcium salt of (5-100):(5+100):(1-6), and of the liquid base to dry matters – 1.1÷20.6:98.9-5-79.4 correspondingly. In doing so the mentioned thermotropic polysaccharide is transferred into soluble state by means of heating the mixture up to the temperature higher than the temperature of dissolving the polysaccharide, due to which a mixture for granulating is formed as a calcium salt suspension in the polysaccharide solution, which is extruded into the forming medium at the temperature higher than the jelling temperature of the thermotropic polysaccharide. In doing so as the forming medium a solution on the basis of soluble calcium salts is used, as a result of said extrusion of the mixture for granulating in the forming medium primary coats of granules are formed, they are moved from the forming medium to the fixing medium, in particular of an acid of a concentration of 0.1...0.6 %, in which they are kept in the course of 30... 180 minutes, as a result of what completed granules are formed. |
