PURPOSE: A storing method of ginger is provided to reduce the generation of softening of ginger and fungi in a constant temperature and constant humidity storage, and to maintain the surface hardness so that the storage period of the ginger is extended to almost one year. CONSTITUTION: Ginger is mixed with artificial soil and is stored in a constant temperature and constant humidity storage in the state of maintaining the temperature at 10-15 deg. C and a relative humidity of 90% or more. The porosity of the artificial soil is 30-80%. The average particle size of the artificial soil is 3-15 mm. The artificial soil is at least one selected from vermiculite, pumice, perlite, and expanded soil. The expanded soil is artificial soil manufactured by plasticizing expanded soil materials including soil or rock, and expanding the porosity. After ginger is mixed with the artificial soil in which water is absorbed and stored at 10-15 deg. C and relative humity of 90% or more, the ginger is pre-processed at 20-30 deg.
