PROBLEM TO BE SOLVED: To provide a composition which has ganache-like palate feeling, with water activity of <0.60 to be distributable for a long period in one year scale while having a water content of 12-18 wt.% in a high range, and is extremely excellent in flavor balance, and to provide a method for efficiently producing the ganache-like composition.SOLUTION: A ganache-like composition includes 40-70 wt.% of a saccharide of not higher than a disaccharide, and 5-20 wt.% of oil and fat. The ganache-like composition includes, based on the total weight, 0.1-1.5 wt.% of a gallate type catechin, 2.5-7.5 wt.% of water soluble collagen with an average molecular weight of ≥4,000, 1.0-4.0 wt.% of a thickening stabilizer and/or soybean polysaccharide, and 10-35 wt.% of a linear polyhydric alcohol as the saccharide of not higher than the disaccharide, and has a water content of 12-18 wt.%, and water activity of <0.60 in the water content. |
