PURPOSE: A peanut sprout powder is provided to offer vegetable proteins including amino acids similar to those of egg, especially, the content of methionine and cysteine is supplemented. CONSTITUTION: A peanut sprout powder comprises the essential amino acid in which methionine is supplemented at the rate of over 500mg/100g and more than 400mg/100g of cysteine is included. The peanut sprout powder is manufactured by freeze-drying or hot air drying a peanut sprout and pulverizing into the size of 5-150μm. The peanut sprout is produced by germinating medium grain variety or the large seeded of peanut and cultivating the same. Wheat flour mixed with peanut sprout powder comprises the peanut sprout powder in which more than 400mg/100g of methionine and cysteine are included respectively, and the peanut sprout powder is mixed at a rate of 10-50 w% to the total amount of wheat flour. The peanut sprout is cultivated using a culture medium in which a mineral liquid, a microscopic organism liquid including lactobacillus and yeast, and water are mixed. |
