PROBLEM TO BE SOLVED: To provide a method for manufacturing a beer-taste beverage, wherein energy used for boiling liquid raw material is reduced without spoiling the flavor balance of the product.SOLUTION: In the method for manufacturing a beer-taste beverage, the amount of steam used for boiling is reduced by decreasing the amount of the boiled solution of the liquid raw material to less than the full quantity of a boiler in the boiling process in which the boiler equipped with a multitubular heat exchanger (Rohrenkocher) is used, and the flavor balance is adjusted by boiling or leaving the liquid raw material to stand, where the concentrations of 5-hydroxymethylfurfural and volatile components in the liquid raw material are taken as indicators. |
