PURPOSE: A physiologically active substance which protects liver and improves liver function is provided to enhance the effect and to be used as a composition for preventing or treating diseases caused by liver damage and liver function deterioration. CONSTITUTION: A method for preparing a physiologically active substance which protects liver and improves liver function comprises the steps of: making a liquid medium using black rice (Oryza sativa L.); inoculating Basidiomycetes to the medium and culturing; and providing a bioconverted product with improved efficacy for protecting liver and improving liver function through bioconversion. The bioconverted product is a polymeric polysaccharide with immunity. A pharmaceutical or health food composition contains the physiologically active substance.
