PROBLEM TO BE SOLVED: To provide a method for producing sausage having the same bending shape as a natural casing even when using an artificial casing, and furthermore providing a novel texture.SOLUTION: A method for producing sausage is carried out by filling an artificial casing with kneaded meat M extruded from a nozzle 10. When the kneaded meat M passes through the inside of the nozzle 10, the kneaded meat M flowing in the nozzle 10 is divided, and the divided kneaded meats M1, M2 are joined near an outlet of the nozzle 10. In dividing the flowing kneaded meat, the kneaded meat M is divided to first and second passages 17a and 17b with different passage cross-sectional areas such that the divided kneaded meat M on one side contains meat grains larger than meat grains contained in the divided kneaded meat M2 on the other side. |
