PURPOSE: A manufacturing method of fermented soybeans is provided to manufacture fermented soybean simply and speedy by fermentation and grinding which are separated into 2 steps. CONSTITUTION: Beans are washed with water and soaked in water for 10-15 hours. The soaked beans are boiled in a caldron for 4-10 hours. The boiled beans are put into a bamboo basket and fermented with a first at a temperature of 40-45°C for 14-20 hours in a room with the Korean floor heating system. The first fermented beans are pulverized in a pulverizing device. The pulverized beans are put into a bamboo basket and fermented secondarily at a temperature of 40-45°C for 15-20 hours. The second fermented beans are put into a tray and dried in a dryer. The pulverizing device is a screw type stainless steel pulverizing device. Beans are pulverized so that 15-25% (v/v) of beans based on the volume of the whole beans are remained.
