A process for the preparation of iodized salt consists in use of mixture of alcohol solution of sodium iodide with food emulsifier, distilled monoglyceride and its introduction to salt, heated to temperature of 70-83 °C. Solving of sodium iodide in ethanol is carried out under influence of ultrasound (US) of 100-150 khz frequency, 0.15-0.25 W/cmintensity for 20-30 s. Solving of food emulsifier, distilled monoglyceride is carried out at simultaneous action of US of 20-45 kHz frequency, 0.10-0.35 W/cmintensity and US frequency of 1.0-2.5 MHz, 0.5-0.75 W/cmintensity for 0.5 – 3 min. |
