FIELD: food industry.SUBSTANCE: invention relates to food industry. Sunflower press cake is milled and defatted; seed coat is separated to produce protein flour. Protein is extracted from protein flour with a sodium chloride solution. Insoluble sediment is separated by way of filtration to produce an extract. The extragent protein is deposited with an acidic-type reagent. The produced protein paste is washed with water to produce a protein isolate. Fermentative hydrolysis of the protein isolate is performed stepwise. At the first stage one uses whey proteases of cheese milk whey in an amount of 1-2 weight parts per 10 weight parts of the protein isolate at a temperature of 35-37°C during 30-35 minutes. At the second stage one uses vegetal proteases manufactured of sprouted sunflower seeds in an amount of 1-2 weight parts per 3 weight part of the protein isolate at a temperature of 25-35°C during 40-45 minutes. For hydrolysis stopping modified isolate is thermally treated at a temperature of 80-90°C during 5-10 minutes. Drying is performed at a temperature of 40-45°C during 20-24 hours till moisture content is equal to 7-8%.EFFECT: invention allows to manufacture a product with a high biological value and with improved functional and technological properties.6 cl, 1 tbl, 3 ex |
