<P>PROBLEM TO BE SOLVED: To provide a foamable food sustaining strong foaming feeling for a long time, having good texture and appearance, exhibiting excellent durability against high temperature, having reduced unfavorable taste felt because of strong foaming feeling, and capable of being relished to the end, and to provide a method for producing the food. <P>SOLUTION: The foamable food is produced by carrying out (1) a step of obtaining a core material by wrapping chocolate with a hard candy dough, and molding the product into an arbitrary size and shape, and (2) a step of adding a molten liquid of a solid fat onto the core material, and scattering a foamable components comprising a carbonate and an acid thereon before the molten liquid is solidified. The foamable food includes the core material and a foamable coating layer formed on the surface thereof. The core material comprises the hard candy including 5-30 wt.% of the chocolate, and the coating layer includes the carbonate, the acid and the solid fat wherein the content of the solid fat is changed in the direction of the thickness of the coating layer. <P>COPYRIGHT: (C)2013,JPO&INPIT |
