摘要 PURPOSE: A method for preparing high purity gentiooligosaccharides is provided to be used as a substitute of foods such as cocoa, chocolate, coffee, tea, bread, snack, and drink, or a main ingredient of the foods, and to easily prepare high purity gentiooligosaccharides without unnecessary by-product generation. CONSTITUTION: A method for preparing high purity gentiooligosaccharides comprises: a step of adding low purity gentiooligosaccharides to a liquid medium and inoculating microorganisms; a step of culturing and fermenting to consume glucose containing the low purity gentiooligosaccharides; and removing the microorganisms and purifying. The low gentiooligosaccharides contain 15-65 wt% of glucose and 35-85 wt% of gentiooligosaccharides. The flavor and taste of a food are enhanced by adding the high purity gentiooligosaccharides to the food.
