PURPOSE: A processing method of cereals and an instant food using the same are provided to offer cereal instant food for teenagers and elders by increasing and enzymatic treating the cereals. CONSTITUTION: A processing method of cereals comprises the following steps: adding water after increasing cereals and crushing the same; and dry pulverizing the crushed cereals by concurrent processing with enzymolysis. The instant food contains the pulverized cereals as an active ingredient. The cereals are composed of one selected from high carbohydrate content and high protein content. The cereals with high carbohydrate content are sorghum, millet, hog millet, adlay, barley, and buckwheat. The cereals with high protein content are soybean, black bean, and mug bean.
