<P>PROBLEM TO BE SOLVED: To provide an external preparation for skin or a food, excellent in safety, stability and effectiveness in the prevention and amelioration of skin aging, and containing a Maillard reaction inhibitor formulated therewith. <P>SOLUTION: It is discovered that a conventionally unconfirmed function, that is, a Maillard reaction-inhibiting activity for preventing the aging of the skin is possessed by a solvent extract of roots of Bergenia ligulata (Wall.) Eng. (Saxifragaceae), a solvent extract of branches and leaves of Syzygium jambos (L.) Alston, a solvent extract of flowers of a plant of Thea sinensis L. [Camelliasinensis (L.) O.Kuntze], a solvent extract of flowers of a plant of Punica granatum, a solvent extract of leaves of Buxus chinensin (Link 1822), Simmondsia California (Nuttall 1844) or Simmondsia chinensis (Schneider 1907), an extract of a plant of Opuntia of Cactaceae, and an extract of mushrooms of Pleurotus of Pleurotaceae.
