Xylitol is admixed with fruit or vegetable pulp or juice and the mixture dried, e.g. by evaporation under reduced pressure, to a powder. At least 90% of the water content of the fruit or vegetable is preferably removed and, if desired, this can be effected before adding the xylitol. The process is applicable to pineapples, apricots, bananas, carrots, dates, carob beans, cucumbers, lettuce, spinach, cabbage, celery, tomatoes &c. and further powdered xylitol and edible flavouring and colouring may be added to the powdered product before it is sealed in fluid-tight containers. |
