摘要 PURPOSE: A manufacturing method of red pepper paste is provided to manufacture red pepper paste with an excellent functionality and preference by extracting active ingredients having the blood glucose lowering property from yacon leaves and barnyard millet and adding to the red pepper paste. CONSTITUTION: A first material is manufactured by mixing 1-22.2 weight% of barnyard millet rice obtained from barnyard millet, 1-21.2 weight% of glutinous rice and 19.5-29.5 weight% of malt water, and fermenting at 55-65deg.C for 5-7 hours with stirring. The first materials is mixed with 1-5 weight% of extract of yacon leaves, 5.5 weight% of fermented soybean powder, 15-25 weight% of red pepper powder, 8-13 weight% of salt, and 5.0 weight% of starch syrup and fermented at 22-28deg.C for 90-120 days. The extract of yacon leaves is manufactured by adding a weight ratio of 9.5-10.5 of water to yacon leaves and extracting at 90-110deg.C for 60-120 minutes.
