PURPOSE: A method of manufacturing pig skin pork cutlet is provided to manufacture pig skin pork cutlet using pork skin which contains a large amount of collagen. CONSTITUTION: A method of manufacturing pig skin pork cutlet comprises the following steps: boiling pig skin and spice for removing smell at a high temperature for 10-20 minutes; preparing dough for skin by mixing 60 parts by weight of glutinous rice flour, 50-70 parts by weight of eggs, and 0.5-3 parts by weight of salt; marinating the boiled pig skin and covering with glutinous rice flour; re-covering the glutinous rice flour covered pig skin with dough for skin; and covering the dough covered pig skin with dough flour to finish the same. The spice for removing is manufactured by adding 1-3 parts by weight of garlic, 0.5-2 parts by weight of ginger, 0.5-2 parts by weight of orange peel, 3-10 parts by weight of white wine, 0.05-0.5 parts by weight of cinnamon powder, 1-3 parts by weight of salt, and 0.05-0.5 parts by weight of pepper to 100 parts by weight of pig skin. In a process of marinating the pig skin, 0.1-2 parts by weight of salt and 0.1-1 part by weight of pepper are added to 100 parts by weight of the boiled pig skin.
