Method and apparatus for the heat treatment of sensitive products in liquid or pasty form, especially food products. The products are subjected to a heat cycle under controlled atmosphere in an enclosure or vessel (1) forming a body of revolution used in combination with means for heating and whose directrix is slightly inclined in relation to the horizontal, the filling of the products remaining less than one half of the volume of the said vessel, the liquid or pasty mass being subjected to stirring by the rotation of a slowly-rotating paddle stirrer, the rate being slower than 30 revolutions per minute, the stirrer comprising at least one paddle and preferably two paddles capable of raising a limited quantity of products, taken from the bottom of the vessel (1) and letting it fall into the high part of the latter. <IMAGE> |
