PURPOSE: An amino acid seasoning composition is provided to enhance in all aspects of functionality, usability, and economical efficiency and to have an excellent savory taste and a salty taste. CONSTITUTION: A composite amino acid seasoning composition comprises L-glutamic acid and basic amino acid. A pH of the composite amino acid seasoning composition in an aqueous solution is 6.5 to 8.0. The basic amino acid is amino acid selected from the group consisting of L-lysine, L-arginine, ornithine, citrulline, and a combination thereof. The basic amino acid is amino acid selected from the group consisting of L-lysine, L-arginine, and a combination thereof. The composition comprises L-glutamic acid, L-lysine, and L-arginine. The basic amino acid is L-lysine, and an amino acid seasoning composition including L-glutamic acid and L-lysine is amorphous. A molar ratio of L-glutamic acid and L-lysine in the amino acid is 0.9 to 1.0:1.0 to 1.1. A pH of the composite amino acid seasoning composition in an aqueous solution is 6.5 to 7.8. L-glutamic acid and basic amino acid have a free base form. |
