PURPOSE: Cheese producing apparatus and method capable of sterilizing and cooling raw milk, and forming curd are provided to rapidly and uniformly heat the raw milk without the temperature deflection. CONSTITUTION: A cheese producing apparatus comprises the following: an inner cylinder(11) including an internal space for inserting ingredients; an outer cylinder(13) surrounding the inner cylinder, and forming a passage(15) in a gap in between the inner cylinder and the outer cylinder; a heater installed on the passage; a cover(20) combined to the upper side of a main body for sealing the internal space; a stirring unit stirring the ingredients inside the internal space; a heat exchange medium supply unit supplying a heat exchange medium capable of heat-exchanging with the inner cylinder to the passage for heating and cooling the inner cylinder; a steam heating unit spraying steam to the passage for transferring heat energy of the steam to the inner cylinder; a boiler(40) generating the steam, and a steam supply pipe connected to the boiler; a nozzle spraying the steam to the passage; and a cooling unit supplying cooling water to the passage. |
