The present invention relates to formulations of astaxanthin derivatives in the form of a solution of the astaxanthin derivative in an organic solvent suitable for food, the organic solvent being selected from among oils, fats, and waxes and mixtures thereof, having a content of astaxanthin derivative of more than 2 wt% relative to the total weight of the formulation, wherein the astaxanthin derivative is composed of at least one compound of the formula I at at least 80 wt%, in particular at least 90 wt%, and especially at at least 96 wt%, wherein the fraction of the all-trans isomer (l-trans) relative to the total amount of the compound of the formula (I) contained in the solution is less than 80%, in particular at most 75 wt%, and especially at most 70 wt%, in particular in the range of 40% to < 80%, preferably in the range of 45% to 75%, and especially in the range of 50 to 70%. The astaxanthin derivatives are compounds of the following formula (I), wherein R is a group of the formula (R), wherein # means the connection to the carbonyl group, A is -CH2CH2- or -CH=CH-, and Rx is C1-C4 alkyl; and the astaxanthin derivatives are astaxanthin derivatives that are composed of the compounds of the formula (I) at at least 80 wt%, in particular at least 90 wt%, and especially at at least 96 wt%.
