An image processing method of an aspect of the present invention obtains a mosaic image picked up by an image pickup means comprising an image pickup element in which a basic array pattern is disposed repeatedly in the horizontal and vertical directions, and stores first correction data and second correction data, said first correction data comprising the coordinates of a defective pixel within the image pickup element and correction information related to the position of the defective pixel within the basic array pattern, and said second correction data comprising a correction pattern that corresponds to the correction information and indicates the positions, relative to the defective pixel, of a plurality of surrounding pixels that are to be used for correcting the defective pixel and have the same color as the defective pixel. Then, the correction pattern is read out on the basis of the correction information included in the first correction data, the coordinates of the surrounding pixels to be used for correcting the defective pixel are calculated on the basis of the first correction data and the read-out correction pattern, pixel values corresponding to the surrounding pixels located at the calculated coordinates are extracted from the mosaic image, and the pixel value of the defective pixel is calculated by interpolating the extracted pixel values.
