A method of preserving meat and fish products subjected to heat treatment in a final finishing which comprises adding to the raw meat or fish a granular preservative comprising sorbic acid powder particles whose surface has been coated with a hardened oil, said preservative being prepared by the steps comprising melting a hardened oil having a melting temperature of 40 DEG -90 DEG C., adding to said melted hardened oil maintained at a temperature not exceeding 90 DEG C., sorbic acid powder in an amount of 1/10 to 1/2 of the weight of said hardened oil, dispersing the sorbic acid powder uniformly in the melted hardened oil at said temperature, and thereafter cooling the melted mixture by spraying it. |
